Name: Ashley Cooper
Position: Senior Sous Chef at Plymouth
Joined Company: 2013
I have spent all my working life in the hospitality industry and believe you have to have a passion for what you do! Having worked in fine dining and other restaurants I joined Le Bistrot two and half years ago as a Chef de Parti; I have now progressed to Senior Sous Chef.
I was looking for a new challenge in the industry and by co-incidence a family friend had been for a meal in the Le Bistrot Pierre in Derby and they raved about it so much that I went online to take a look at the company website….. the rest is history!
I see my career developing with Le Bistrot Pierre and like the fact that they have the feel of a family business, but at the same time the benefits of a large company that can invest in training and development which ultimately lead to bigger career opportunities within. The senior management team have been promoted through the company and this shows that the opportunities are there for everyone.
My initial training was done in Derby but I have also worked in Torquay and Cardiff; helping out when required. It’s good to work in other locations and see how the different parts of the business operate and you can always learn from other managers, pick up tips and new ideas from them.
When I am not working I like to spend time with my wife and young family, playing football and cricket and enjoying holidays. My career is important to me and I see it continuing with Le Bistrot Pierre as I want to be part of their future.
We had the lunchtime set menu. This offered a good choice at a reasonable price. The food was excellent; the service was very good.Andrew Stephenson via online feedback
