I was appointed as Head Chef in Derby in January 2015 and it's great working here! Everyone works together as a team; there is a real family feel about the whole business and I like the fact that everyone knows you.
Before coming to Le Bistrot Pierre I worked in large corporate hotels and also on cruise ships which is completely different to where I am now. At Le Bistrot Pierre I feel part of the company and am well supported. The best example I can give is when I attended the management training programme in 2014. I completed all three parts, Bleu, Blanc and Rouge, and it has been very useful in my job; particularly when coaching and developing my own staff, and helping them identify areas for improvement. The programme has also helped me to develop my communication skills as well as my overall knowledge of the wider organisation. Quite recently I encouraged a Sous Chef in another bistrot to attend if they have the opportunity, and I hear that he has now started the course which is great news!
I joined the company in 2006 as I particularly liked the idea of cooking fresh food. I started as a Commis Chef in Leamington Spa and when the new bistrot in Stratford upon Avon opened, I moved there as a Senior Sous Chef. In 2013 I moved again to Plymouth as Head Chef. Although every bistrot is different and has its own character; all the staff know each other very well. We keep in touch with other restaurants and there is always help there if you want it…. we work together as a team.
When I get time off I love to catch up with friends and at the moment I am having driving lessons and hope to get my full motorbike licence very soon.
