Front of House
For front of house, duty managers quickly learn the ropes and take their first step on the leadership ladder. Assistant manager is next with the chance to learn from the team in Bistrot and to attend off site and distanced learning programmes, which we call future leaders.
Then there is the step to general manager where you get the opportunity to call the shots. Leading a team of up to 80 people, working alongside the head chef you get the chance to grow both your team and your business with a high degree of autonomy.
Key facts…. most duty managers start as a team member and over half of our general managers made the journey from being a team member to running their own restaurant.
Back of House
For back of house, we also have a structured approach to your development. Many of our head chefs start out washing dishes. As well as developing cooking skills, there is also a leadership and theory side to life in the kitchen.
The future leaders programme is available to our sous and head chefs too.
Commis chef is the starting point, then chef de partie, sous chef and finally running a team of up to 20 people as head chef. (Some of our bigger restaurants also have junior and senior sous chefs too.)
As head chef you are part of the senior restaurant leadership team, the head chef and the general manager! You run the whole back of house and more. As head chef it’s your job to help the general manager form and develop a plan to grow the team and the business.
